Butter Bean Mash

Vegan!

Ingredients
1 tablespoon Vegan "butter"
48 ounces Butter beans
1.1 cups Vegetable stock
Salt & Pepper to taste
Juice from 1 lemon
1 tablespoon Vegan cream or yogurt (optional)
OPTIONAL ADD-INS INCLUDE:
Mustard
Fresh herbs
Vegan cheese
Curry powder
Tomato paste
Garlic paste or roasted garlic

Step by Step Instructions
  1. Melt the "butter" in a large saucepan. Rinse the butter beans.
  2. Put the butter beans, vegetable stock, salt, and pepper into the saucepan, then cover the pan and let simmer over medium heat for 5 minutes.
  3. Add the lemon juice & vegan cream, then pour the contents of the pan into a blender and blend the mixture into a smooth puree.
  4. If necessary, stir in a little water if the mixture is too thick or return the mixture to the pan for 1 or 2 minutes to re-thicken. Adjust seasonings as desired, then serve.
