Tarragon-Dijon Pork Chops

Ingredients
4 Boneless pork chops
1/2 teaspoon Garlic powder
1/4 teaspoon Pepper
2 tablespoons Olive oil (divided)
1 pound Mushrooms (sliced)
4 Green onions (chopped)
1/4 cup Dijon mustard
1 to 1 1/2 teaspoons Hot sauce
1 tablesoon Red wine (optional)
1 tablespoon Fresh tarragon (minced)

Step by Step Instructions
  1. Preheat your oven to 400 degrees. Apply the garlic powder and pepper to the pork chops. Heat 1 tablespoon of oil in an ovenproof skillet at medium heat. Brown the pork chops on both sides, then remove them from the pan.
  2. In the same skillet, heat the remaining oil over medium high heat and cook the mushrooms and green onions for 3 minutes, stirring constantly. Place the pork chops onto the mushroom mixture and bake uncovered for about 9 minutes.
  3. While the pork chops cook, Mix the mustard, hot sauce, and red wine (if using) in a bowl. Remove the pork chops from the oven, spread the mixture over them and bake them for 2 more minutes. Sprinkle them with tarragon before serving.
