Brown Butter Salmon With Capers And Sundried Tomatoes

Ingredients
4 salmon fillets
2 tablespoons Pine nuts
2 tablespoons Sun dried tomatoes
1 stick Salted butter
1 tablespoon Capers
2 tablespoons Olive oil
Salt & pepper

Step by Step Instructions
  1. Pat the salmon dry and season the fillets with salt & pepper.
  2. Heat the olive oil in a cast-iron skillet over medium-high heat. Add the salmon and let it cook for 4 minutes on each side. While the salmon cooks, prepare the sauce:
  3. Chop the sundried tomatoes into small pieces. Toast the pine nuts in a skillet for 2 to 3 minutes over medium heat
  4. Stir the butter into the pan, then after 2 to 3 minutes, add the tomatoes, let it cook for 1 minute, stir the capers into the brown butter sauce.
  5. Plate the salmon, then spoon the sauce over each fillet and serve.
